Nana B’s Banana Chocolate Chip Muffin Recipe

My Mom’s birthday is in July so I want to share a family favorite recipe from her kitchen. 

I would say it is my Mom’s signature recipe that my 5 siblings and I all love…and Mom’s 10 grandkids all love it too!  

I always loved to wake up or come home from soccer practice and smell this baking in the oven!  

I am not very good at baking…but this one almost always comes out right! 

Our family has to eat gluten free and this recipe is easy to make GF by switching to GF flour…no other changes needed! 

It’s a great way to use up over ripe bananas! 

Hope you enjoy it! 

Ingredients:

  • 1/2 c butter softened (1 stick)
  • 1 c sugar
  • 2 eggs
  • 1 cup mashed bananas (3 medium bananas)
  • 1/3 cup milk
  • 1 tsp lemon juice or vinegar
  • 2 cup flour (may substitute gluten free flour)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup of dark chocolate chips (optional)

Instructions:

  1. Preheat oven to 350
  2. Cream together butter & sugar.
  3. Add eggs & mashed bananas.
  4. Stir milk & lemon juice (or vinegar) together. 
  5. 2. In a separate bowl,
  6. 3. mix together flour, baking soda & salt. 
  7. Slowly mix dry ingredients with wet ingredients and pour in the milk and lemon juice mixture.  Stir all ingredients together. 
  8. Add chocolate chips. 
  9. Line muffin tin with 
  10. 18 large muffin cups or 36 small muffin cups.
  11. Bake at 350. 30 minutes for large muffins or 20 minutes for small muffins. 
  12. Allow to cool.  

Enjoy and share with friends and neighbors! 

Great for breakfast on the go, to pack in lunch boxes or for an after school snack!  

These freeze well too!
